Elderflower Cordial

2 oz Elderflower heads (about 18)
1 ½ pints of boiling water
1 kg granulated sugar
Juice and rind of ½ lemon
½ oz citric acid

Place shaken heads in bowl.
Pour boiling water over them and leave overnight.
Strain liquid into saucepan.
Add sugar, heat to dissolve and leave to cool.
When lukewarm add citric acid and lemon juice and rind.
Bottle and store in fridge.

Dilute to taste.

Flower heads can be stored in the freezer for use at a later date.

 

 

Chocolate Biscuits

1   tablespoon golden syrup
4oz margarine.                                             

Heat in pan

Add

2   dessert spoons drinking chocolate

or

1   dessert spoons cocoa & 1 dessert spoon sugar

Crush ½ lb  biscuits (digestives) in a bowl and add above mixture.
If liked add vanilla, grated orange, raisins or nuts. (or everything!)
Press into shallow tin 8x8, cool
Cover with melted chocolate (top with cherries, nuts, before chocolate sets)
Always line tin (aluminium foil)
